Sour Mash

Ein Verfahren, bei dem ein Teil einer zuvor vergorenen Maische (Backset oder Setback) einer neuen Charge zugesetzt wird, um den pH-Wert zu regulieren und Konsistenz zu fördern. Praktisch jeder Bourbon und Tennessee Whiskey nutzt das Sour-Mash-Verfahren, trotz des irreführenden Namens.
