Der Prozess, bei dem das Innere eines neuen Eichenfasses für eine kontrollierte Dauer in Brand gesetzt wird, wodurch eine Holzkohleschicht entsteht, die als Aromafilter wirkt und Holzzucker karamellisiert. Die Ausbrenngrade reichen von #1 (leicht, 15 Sekunden) bis #4 (Alligator Char, 55 Sekunden).
