French oak barriques from the Sauternes appellation in Bordeaux, previously used to age noble rot dessert wine. The botrytis-affected wine leaves behind intensely sweet, honeyed residue in the wood. Sauternes cask finishes are prized for adding an ethereal sweetness and complexity that differs markedly from sherry or port. Used by several premium Scotch distillers for special releases.
