European oak butts previously used to mature Pedro Ximénez (PX) sherry — an intensely sweet dessert wine made from sun-dried PX grapes. These casks contribute the most dramatic color and sweetness of any sherry cask type. The residual sugar absorbed into the wood creates an almost syrupy richness in the finished whisky. PX casks are frequently used for finishing rather than full maturation due to their overwhelming intensity.
