About

European oak butts that held fino or manzanilla sherry — biologically aged under a veil of flor yeast. Unlike oxidatively aged sherries, these casks impart far less color and dried fruit character. Instead, they contribute a distinctive saline, nutty, and yeasty quality that is highly sought after for its subtlety and complexity. Relatively rare in the whisky world compared to oloroso butts.
